INGRÉDIENTS

450 g (1 lb) de filets de poisson blanc (préférablement morue ou flétan)

1 c. à soupe de pâte de cari rouge

1 c. à thé de sauce de poisson

1 c. à soupe de sauce chili thaïlandaise douce

½botte de coriandre

2 œufs

¼ tasse de riz cuit Jus de 2 limes

Trempette

½ tasse (110 g) de sucre

13 tasse (80 ml) de vinaigre blanc

1 c. à soupe de sauce de poisson

½concombre libanais, égrené et coupé en dés

1 long piment rouge, finement haché

MARCHE À SUIVRE

1.Pour préparer la trempette: dans une petite casserole, combiner le sucre, le vinaigre et 2 c. à soupe d'eau froide.

Cuire à feu moyen élevé en remuant jusqu'à ce que le sucre soit dissout, puis augmenter le feu et porter à ébullition. Incorporer la sauce de poisson, retirer du feu et laisser refroidir complètement. Au moment de servir, incorporer le concombre et le piment rouge.

2.Assembler la lame en SMC dans le bol mélangeur. Couper le poisson en gros cubes et déposer dans le bol avec la pâte de cari, la sauce de poisson, la coriandre, les œufs, le riz et le jus de lime. Pulser jusqu'à consistance lisse.

3.Chauffer l'huile dans une friteuse ou un wok.

4.Ajouter le mélange à la cuillère dans l'huile chaude et cuire 1–2 min de chaque côté ou jusqu'à ce que les galettes de poisson soient dorées. Retirer et égoutter sur du papier essuie- tout. Répéter l'opération avec le reste du mélange et servir accompagné de trempette et de quartiers de lime.
