Croustades à la tomate et au basilic

1petite gousse d’ail, épluchée

3tomates italiennes, le pédoncule enlevé, épépinées, et coupées en morceaux

1c. à soupe de feuilles de basilic frais hachées

2c. à soupe de fromage parmesan râpé

1c. à soupe d’huile d’olive extra vierge

1/8 c. à thé de sel

1/8 c. à thé de poivre noir

32tranches de baguette

(1/4 de pouce d’épaisseur chacune)

Mettre l’ail dans le bol du mélangeur à main muni de la lame. Insérer l’adaptateur du mélangeur à main dans le corps du moteur et le fixer sur le bol. Hacher à la vitesse 2 pendant 5 à 10 secondes, ou jusqu’à ce que l’ail soit finement émincé. Ajouter les tomates et le basilic. Activer par pulsation 4 à 5 fois à la vitesse 1, environ 4 secondes à la fois, pour hacher grossièrement les ingrédients. Ajouter le fromage, l’huile, le sel et le poivre. Activer par pulsation 2 à 3 fois à la vitesse 1, environ 4 secondes à la fois, pour combiner le tout.

Avant de servir, placer les tranches de baguette sous le gril à 4 pouces de la source de chaleur et griller légèrement chaque côté pendant 1 à 11/2 minute. Laisser refroidir. Garnir les canapés en posant sur chaque tranche environ 11/2 cuillère à thé de mélange de tomate.
