Preparation

Defrost frozen shellfish before cooking with steam.

Peel, clean and wash the shellfish.

Cooking pans

Use greased, perforated pans to cook shellfish.

Cooking time

The longer shellfish are cooked, the firmer they become.

Observe the cooking times given in the chart.

When cooking shellfish in sauce or stock, we recommend that you increase the specified cooking time by a few minutes.
