Skrællen af en stor appelsin skåret i småstykker 3 spsk. soya sauce

2 tsk. eddike

2 tsk. sukker

En knivspids sort peber 4 spsk. madolie

-Ingefær, løg, salt, 1 spsk. soya sauce og 1 spsk. sherry (eller risvin) blandes.

-Kyllingen marineres i blandingen i 1/2 time, hvor den vendes fra tid til anden.

-Ingefær og løg fjernes.

-Medens kyllingen marineres, blandes chilipeberet og appelsinskrællen.

-I en separat skål blandes den resterende sherry (eller risvin) og soya sauce med eddike, sukker og sort peber.

-Olien hældes i Wok-gryden, og varmen stilles på 4.

Kyllingen steges under omrøring, indtil den er mør, hvorefter den tages op af Wok-gryden.

-Chilipeberet og appelsinskrællen ristes under omrøring i 15 sekunder, hvorefter kyllingen lægges tilbage i Wok-gryden. Der omrøres for at dække kyllingen.

-Blandingen af sherry (risvin), soya sauce, sukker, eddike og peber tilsættes. Der steges under omrøring i 1/2 minut.

-Retten er klar til servering. 4 portioner.

2 stk. hele kyllingebryst som er udbenet og skåret i bittesmå stykker

1 spsk. majsmel

1 spsk. madsherry eller risvin (mirin)

1 spsk. soya sauce

4 spsk. madolie

1 grøn peber skåret i småstykker

8 skivede vandkastanjer

250 g champignon i skiver 1/2 tsk. salt

2 spsk. cashew-nød (anakardienød), ristet i hoisin sauce

-Kyllingestykkerne vendes i en blanding af majsmel, sherry/risvin og soya sauce i en stor skål.

-1 spsk. olie hældes i Wok-gryden og opvarmes, til den næsten ryger. Der tilsættes

grøn peber, vandkastanjer, champignon og salt og ristes under omrøring i 2 1/2 minut.

-Grønsagerne fjernes og stilles til side.

-Den resterende madolie hældes i Wok-gryden og varmes godt. De marinerede kyllingestykker hældes i og steges under omrøring, indtil de er møre.

-Hoisin saucen tilsættes, og der omrøres grundigt.

-Grønsagerne tilsættes igen, og retten steges i

-Cashew-nødderne tilsættes, og retten gennemvarmes.

1 1/2 kop råt kyllingekød skåret i små strimler

1 kop selleri skåret i tynde skiver

4 groftskårne forårsløg 1/2 kop ærter

1/2 kop bambusskud skåret i skiver 6 skivede vandkastanjer

1 kop vand

1 spsk. lys soya sauce Salt og peber efter behag 1/2 kop ristede mandler

-Olien opvarmes i Wok-gryden. Tilsæt derefter ingefær, løg og kyllingestykker.

Steges under omrøring i ca. 1 minut.

-Tilsæt selleri, løg, ærter, bambusskud og vandkastanjer.

Blandes hurtigt, hvorefter der tilsættes vand.

-Sæt låg på Wok-gryden og steg i 4 minutter.

-Tilsæt soya sauce, salt og peber.
