Bolo de Abacaxi

Ingredientes

1 ¼ xícara de farinha de trigo

2 colheres de chá de fermento em pó

¼colher de chá de sal ¾ xícara de leite

1 colher de chá de baunilha

1 ovo

4 abacaxi cortado em fatias e uma xícara de abacaxi picado ½ xícara de manteiga ou margarina

¼xícara de açúcar mascavo

Preparação

Derreta ¼ xícara de manteiga ou margarina em uma forma de 23x23cm (9x9pol.). Polvilhe o fundo da forma com o açúcar mascavo sobre a manteiga. Forre com as fatias de abacaxi o fundo da forma. Misture a farinha de trigo, o fermento em pó e o sal no recipiente da batedeira. Adicione o açúcar, ¼ de manteiga ou margarina e o leite. Bata por 2 minutos sem velocidade média, raspando as laterais do recipiente frequentemente. Adicione a baunilha e o ovo, bata por mais 1 minuto. Coloque a mistura na forma por cima do abacaxi com cuidado. Leve ao forno por aproximadamente 50 a 60 minutos, ou até sentir que a superfície esteja esponjosa, tocando-a com a ponta do dedo. Retire do forno e tire da forma de cabeça para baixo. Deixe esfriar por alguns minutos até ter a certeza de que não ira grudar no fundo da forma e sirva. O abacaxi picado poderá ser substituído por pêssegos.
