FRIED POTATO BALLS

4 medium size potatoes

1/2 cup grated Cheddar cheese 1 teaspoon salt

1/2 teaspoon cayenne pepper 1/2 cup sifted bread crumbs 7 cups oil

Flour

2 tablespoons cream

2 tablespoons butter

2 beaten egg yolks

1/2 teaspoon baking powder 1 egg beaten

2 tablespoons water

1.Pour 7 cups of oil into deep fryer.

2.Preheat the deep fryer to 380°F.

3.Peel and mash 4 medium size potatoes.

4.Add the following to the mashed potatoes: 2 tablespoons butter, 2 tablespoons cream, 1/2 cup grated Cheddar cheese,

2 beaten yolks, 1 teaspoon salt, 1/2 teaspoon baking powder and 1/2 teaspoon cayenne pepper.

5.Whip these ingredients until they are light.

6.Shape them into 1 inch balls.

7.Mix together 1 beaten egg and 2 tablespoons of water. Set aside.

8.Roll the balls in flour, then cover in the egg and water mixture.

9.Roll the balls in sifted bread crumbs.

10.Fry for 6 minutes.

11.Drain them on absorbent paper and serve at once.
