5.3 PRODUCCIÓN DE HELADO

Después de haber instalado la máquina conformemente a las instrucciones del capítulo 3 y haberla esmeradamente lavada y esterilizada, según las instrucciones contenidas en el capítulo 6, proceder de la siguiente manera para iniciar la producción de helado:

-Verificar que el interruptor eléctrico general esté cerrado, que el botón STOP esté iluminado y (solamente en las versiones T4 condensadas con agua) que el grifo de alimentación hídrica esté abierto.

-Levantar la tapa de la tolva y verter la mezcla en el cilindro, respetando escrupulosamente las cantidades mínimas y máximas admitidas por ciclo e indicadas en la siguiente tabla:

La inobservancia de los valores mínimos y máximos de carga pueden conllevar el funcionamiento incorrecto de las máquinas y en algunos casos hasta su deterioro.

5.3.1 CICLO AUTOMÁTICO

-Volver a posicionar la tapa en la tolva para evitar que polvo y otras impurezas entren en contacto con la mezcla.

-Presionar la tecla PRODUCCIÓN AUTOMÁTICA para iniciar el mantecado.

-En el display se visualiza el valor de consistencia durante todo el ciclo de mantecado.

-Pasados algunos minutos y alcanzado el nivel ideal de consistencia relativo al tipo y a la cantidad de mezcla introducida, el compresor se para, la tecla PRODUCCIÓN centellea y un zumbido intermitente avisa al operador que es posible extraer el helado. Si esto no fuera inmediatamente posible, el agitador continuará a girar hasta que la consistencia bajará hasta un cierto valor porcentual (llamado HISTÉRESIS de consistencia, confirmado por el constructor y
