6.1.2 MANUTENZIONE AGITATORE E GUARNIZIONI

Sulle pale dell’agitatore sono montati dei pattini di raschiamento realizzati in materiali plastici atossici idonei all’uso alimentare. Tali componenti sono soggetti ad usura che dipende dalle caratteristiche della miscela impiegata: in presenza di alti tenori di zuccheri e bassi valori di grassi si verificherà un consumo sensibilmente più elevato dei pattini.

Quando il gioco tra pattini e cilindro diventa eccessivo, l’agitatore non riesce più a raschiare perfettamente le pareti del cilindro refrigerante allungando così i tempi di mantecazione: per ripristinare le prestazioni della

macchina è sufficiente sostituire i pattini di raschiamento.

6.1.3 IMPIANTO FRIGORIFERO

Nelle macchine con condensazione ad aria occorre procedere periodicamente alla pulizia delle alette del condensatore rimuovendo lo sporco, aspirato dal motore ventilatore, che può ostruirlo riducendone notevolmente l’efficienza.

Le operazioni di pulizia del condensatore devono essere fatte solamente con un pennello o con un aspiratore.
