Grilled Chicken Fajitas
8 ounces boneless, skinless chicken breast cut into
1 red, yellow or green bell pepper, cut into long thin strips 2
separated into rings
1/3 cup picante sauce or salsa
1 teaspoon bottled or fresh minced garlic
4 (8 inch) flavored or plain flour tortillas, warmed 1/4 cup chopped cilantro
shredded Monterey Jack or Pepper Jack cheese (optional)
Place chicken, bell pepper and onion in a resealable plastic bag. Add picante sauce and garlic. Close bag securely, turning to coat. Refrigerate at least 30 minutes or up to 8 hours before cooking.
