Matefaims
To be prepared 1 hour in advance.
About 20 matefaims • Cooking time: 2 1/2 min. on each side
Matefaim batter
• 250 g plain flour • 1/2 litre milk • 2 eggs • 1 tablespoon cooking oil • salt
Place the flour in a bowl. Make a well in the centre. Break in the whole eggs. Add the oil, salt and half of the milk. Beat hard with a wooden spoon until it is well mixed. Gradually add the remaining milk until the batter is smooth and the consistency of double cream. Leave for 1 hour.
Matefaim des Alpages
Dice some cooked chicken into 1/2 cm cubes. Grate 100 g of Comté or Beaufort cheese. In a frying pan, melt a knob of butter with 2 tbsp oil until golden brown 1 cup of diced bread for croutons.
Variant: Substitute mushrooms for the cheese and ham.
Crapiaux pancakes
Finely chop 1 large onion and fry gently with a knob of butter. Finely dice cured chicken into small cubes. Mix the chicken and onion with the batter.
Matefaim Caroline
Thinly slice a banana. Begin cooking the matefaim on the appliance. Before the top of matefaim have set, place the banana slices on top. Cover with some more batter, and continue cooking. Turn over and cook the other side.
Serve sprinkled with honey and rum.

Begin cooking the matefaim on the appliance. Before the top of matefaim has set, place some apple puree on top. Cover with some more batter, and continue cooking. Turn over and cook the other side.
