Après avoir préparé la viande et l’avoir placée sur une grille dans la lèchefrite, suivez les étapes ci-dessous pour bien positionner la sonde.

1 Couchez la sonde à l’extérieur de la viande le long du haut ou du côté et marquez avec votre doigt où le rebord de la viande s’aligne avec elle.

2 Insérez la sonde complètement dans la viande, jusqu’à la poignée. Elle ne devrait pas toucher l’os, le gras ou le cartilage.

Dans le cas d’un rôti désossé, insérez la sonde dans la partie coupée, dans la région la plus charnue. Dans le cas d’un jambon ou d’un gigot avec os, insérez la sonde jusqu’au centre du muscle inférieur le plus gros ou de l’articulation.

Insérez la sonde au centre du plat, par exemple un pain de viande ou une casserole. Pour la cuisson du poisson, insérez la sonde juste au- dessus des branchies, dans la partie la plus charnue, parallèlement à l’arête.

Insérez la sonde dans la partie la plus charnue de l’intérieur de la cuisse, par le dessous et parallèlement au pilon de la dinde.
