Fillets of Sole (5 oz fillets) | 12 lbs 8 oz |
Salt | 1/2 cup |
Ground Black Pepper | 2 tbsp |
Eggs, Lightly beaten | 2 doz |
Milk | 1 qt |
Dry Bread crumbs | 1 gal |
Butter | 3 lbs 2 oz |
Oil | 3 cups |
Lemon Juice | to taste |
1.Season fish fillets with salt and pepper.
2.Combine egg and milk, dip fish into the mixture.
3.Heat butter and oil in braising pan at 350°F.
4.Coat fish fillets with bread crumbs.
5.Pan fry in shortening over moderate heat, turning carefully to brown on both sides, until fish is flaky.
6.Drain and serve immediately.
