Former 4 galettes de 1,25 cm (12 po) d’épaisseur. Enrober chaque côté des galettes du reste de chapelure.

Dans une grande poêle, faire chauffer l’huile et le beurre à feu moyen. Ajouter les galettes. Faire cuire 5 à 8 minutes ou jusqu’à ce que les galettes soient dorées et bien chaudes, en les retournant une fois avec soin. Servir avec la mayonnaise à la coriandre et aux câpres.
