1 mL (14 c. à thé) de sel

60mL (14 de tasse) de shortening froid

15mL (1 c. à soupe) de margarine ou de beurre froid, coupé

30à 60 mL (2 à 4 c. à soupe) d’eau glacée

Deux abaisses

475mL (2 tasses) de farine tout-usage

4 mL (34 c. à thé) de sel

120mL (12 tasse) de shortening froid

45mL (3 c. à soupe) de margarine ou de beurre froid, coupé

75à 105 mL (5 à 7 c. à soupe) d’eau glacée

Placer la lame polyvalente dans le bol à préparation. Ajouter la farine et le sel. Faire tourner le robot jusqu’à l’obtention d’un mélange homogène, environ 2 secondes. Ajouter le shortening et le beurre. Faire tourner le robot par impulsions 3 ou 4 fois, 2 ou 3 secondes chaque fois ou jusqu’à l’obtention d’un mélange grumeleux. Saupoudrer une quantité minimale d’eau uniformément sur le mélange. Faire tourner le robot par impulsions 1 à 3 fois, 2 ou 3 secondes chaque fois ou jusqu’à ce que le mélange se détache des parois du bol et que les ingrédients secs soient humectés. Ajouter plus d’eau au besoin.

Sur une surface légèrement farinée, former une boule (2 boules pour 2 abaisses). Abaisser chaque boule de pâte de façon à former un cercle dépassant de 5 cm (2 po) l’assiette à tarte inversée. Placer l’abaisse dans l’assiette à tarte. Suivre les directives de la recette de tarte.

Pour faire cuire une croûte à tarte simple, pincer les bords de l’abaisse. Bien piquer l’abaisse à la fourchette. Faire cuire à 218 °C (425 °F) 9 à

12 minutes ou jusqu’à ce que la croûte soit légèrement dorée. Pour faire cuire une tarte à deux croûtes, suivre les directives de la recette de tarte.
