1aubergine moyenne (environ 680 g [112 lb])

45mL (3 c. à soupe) d’huile d’olive

115g (4 oz) de mozzarella, refroidi

55g (2 oz) de parmesan, coupé en morceaux de 2 cm (34 de pouce), à la température ambiante

235mL (1 tasse) de ricotta

1 œuf

1 mL (14 c. à thé) de sel

1mL (14 c. à thé) de poivre noir

475mL (2 tasses) de sauce pour pâtes aux tomates et au basilic préparée, divisée

1pot de 200 g (7 oz) de poivrons rouges rôtis, bien égouttés

Placer le disque éminceur de 2 mm dans le bol à préparation. Couper l’aubergine en morceaux de 6,25 cm (212 po) de long pour qu’ils entrent dans la goulotte. Faire tourner le robot pour trancher. Retirer et disposer uniformément dans un moule graissé de 38 x 25 x 2,5 cm (15 x 10 x 1 po). Napper d’un filet d’huile d’olive. Faire cuire à 232 °C (450 °F) pendant 5 à 8 minutes ou jusqu’à ce que l’aubergine soit légèrement tendre.

Entre-temps, remplacer le disque éminceur par le disque déchiqueteur de 4 mm. Ajouter la mozzarella. Faire tourner le robot pour déchiqueter. Retirer et réserver.

Remplacer le disque déchiqueteur par la lame polyvalente dans le bol à préparation. Faire tourner le robot, ajouter le parmesan par la goulotte. Faire tourner le robot 25 à 30 secondes pour râper. Ajouter la ricotta, l’œuf, le sel et le poivre noir. Faire tourner le robot jusqu’à l’obtention d’un mélange homogène, 10 à 15 secondes.

Verser 235 mL (1 tasse) de sauce pour pâtes dans un moule graissé de 30,5 x 20,3 x 5 cm (12 x 8 x 2 po). Étaler la moitié de l’aubergine sur la sauce. Garnir de la moitié des poivrons rouges et de la moitié du mélange de ricotta. Continuer à alterner les couches d’aubergine, de poivrons rouges et de mélange de ricotta. Garnir des 235 mL (1 tasse) de sauce pour pâtes restants et de mozzarella. Faire cuire à 177 °C (350 °F) de 30 à 40 minutes ou jusqu’à ce que l’aubergine soit tendre et que le plat bouillonne. Laisser reposer 5 à 10 minutes avant de servir.
