175mL (34 de tasse) de moitiés ou de morceaux de noix

60mL (14 de tasse) de germe de blé

5 mL (1 c. à thé) de sel

5mL (1 c. à thé) de beurre ou de margarine fondu, au goût

Combiner le lait, l’eau, 45 mL (3 c. à soupe) de beurre et le miel dans une petite casserole. Faire chauffer à feu doux jusqu’à une température allant de 40, 5 à 46,1 °C (105 à 115 °F). Incorporer la levure en remuant pour la dissoudre. Réserver.

Placer la lame pétrisseuse dans le bol à préparation. Ajouter la farine tout-usage, la farine de blé entier, les noix, 60 mL (14 de tasse) de germe de blé et le sel. Faire tourner le robot pendant 10 secondes; racler les parois du bol. Faire tourner le robot jusqu’à l’obtention d’un mélange homogène, en raclant les parois du bol au besoin. Pendant que le robot tourne, ajouter lentement le mélange de levure par la petite goulotte. Faire tourner le robot pendant 1 minute à 1 minute 15 secondes; la pâte formera une boule légèrement collante.

Retirer et placer la pâte dans un bol graissé en la retournant pour graisser tous les côtés. Couvrir; laisser gonfler dans un endroit chaud jusqu’à ce que la pâte double de volume, soit pendant environ

45 à 60 minutes.

Dégonfler la pâte. Former une miche et placer dans un moule à pain graissé de 21,6 x 11,4 x 6,3 cm (812 x 412 x 212 po). Couvrir; laisser gonfler dans un endroit chaud jusqu’à ce que la pâte double de volume, soit pendant environ 45 à 60 minutes. Badigeonner de beurre fondu et saupoudrer de germe de blé, au goût.

Faire cuire à 191 °C (375 °F) pendant 30 à

40 minutes ou jusqu’à ce que le pain soit doré et qu’un son caverneux se fasse entendre lorsqu’on tape dessus. Laisser refroidir sur une grille.
