45mL (3 c. à soupe) de feuilles de coriandre fraîche légèrement tassées

120mL (12 tasse) de mayonnaise ou de sauce pour salade

15mL (1 c. à soupe) de câpres, égouttées

Fricadelles

475mL (2 tasses) de cubes de pain français ou italien

15mL (1 c. à soupe) de feuilles d’estragon frais

1lanière d’écorce de citron, partie jaune seulement

2oignons verts, coupés en morceaux de 2,5 cm (1 po)

12 branche de céleri, coupée en morceaux de 2,5 cm (1 po)

1 œuf

10mL (2 c. à thé) de jus de citron

1 mL (14 c. à thé) de sel

0,5 mL (18 c. à thé) de poivre noir

455g (1 lb) de filets de saumon frais*, grillés, sans peau

15mL (1 c. à soupe) d’huile d’olive

15mL (1 c. à soupe) de margarine ou de beurre

Placer le mini-bol et la mini-lame dans le bol à préparation. Pendant que le robot tourne, ajouter la coriandre par la petite goulotte. Faire tourner le robot pour hacher, de 8 à 10 secondes. Racler les parois du bol. Ajouter la mayonnaise et les câpres. Faire tourner le robot pour mélanger, soit pendant 10 à 12 secondes. Retirer et placer dans un petit bol, couvrir et réfrigérer.

Placer la lame polyvalente dans le bol à préparation. Ajouter le pain. Faire tourner le robot jusqu’à l’obtention d’une chapelure fine, environ 20 secondes. Retirer et placer dans un petit bol.

Pendant que le robot tourne, ajouter l’estragon, l’écorce de citron et les oignons par la petite goulotte. Faire tourner le robot pour hacher, soit pendant 5 à 8 secondes. Racler les parois du bol. Ajouter le céleri. Hacher par impulsions 2 ou 3 fois, environ 2 secondes chaque fois ou jusqu’à ce que le céleri soit haché. Ajouter l’œuf, le jus de citron, le sel, le poivre et 175 mL (34 de tasse) de chapelure. Faire tourner le robot par impulsions 2 ou 3 fois, environ 2 secondes chaque fois ou jusqu’à l’obtention d’un mélange homogène. Ajouter le saumon. Hacher par impulsions 5 ou 6 fois, environ 2 secondes chaque fois ou jusqu’à l’obtention d’un mélange homogène. Le mélange sera mou; refroidir, au goût, pour faciliter la manipulation.
