Specialized cooking method

CSL DELTA-T cooking is a special built-in function that automatically causes the cooking temperature to rise slowly, in direct proportion to the rise in the internal temperature of the food product. The Delta-T, or “difference in temperature” is the constant difference between the two.

Tips

In general, the Delta-T, or temperature difference determines the cooking time. The greater the difference, the faster the item will cook. Experience has shown that the Delta-T should not be less than 68°F (20°C), nor greater than 158°F (70°C).
