150 g di pancetta, tagliata a pezzi

1 cipolle medio-grandi, triturate finemente

1 spicchi d'aglio schiacciati

300 g di funghi novelli, tagliati a fette sottili

4 petti di pollo disossati

275 ml di vino rosso

375 ml di brodo di pollo caldo sale e pepe

farina di grano duro (facoltativa)

Versare tutti gli ingredienti nella pentola a cottura lenta. Mettere il coperchio e cuocere sulla posizione alto (High) per circa 4 ore, oppure per circa 6-7 ore sulla posizione bassa (Low).

Se desiderate, addensare il sughetto aggiungendo un poco di fecola mischiata con dell’acqua. Togliere il coperchio e aggiungere la miscela, mescolando bene (se necessario, prima togliere i petti di pollo e tenerli al caldo mentre si aggiunge la fecola). Rimettere il coperchio e continuare la cottura fino a quando il sughetto sobbolle e si addensa leggermente.

stufato di pollo e dragoncello

15 g di burro

15 ml/1 cucchiaio da cucina di olio

4 petti di pollo

1 cipolla sminuzzata fine

150 ml di vino bianco secco

150 ml di brodo di pollo caldo

4 rametti di dragoncello

50 ml di panna densa sale e pepe

1 cucchiaio/15ml (circa) di fecola

Riscaldare il burro e l’olio in una padella per friggere. Aggiungere i pezzi di pollo e dorarli in modo uniforme. Versare il pollo nel recipiente di cottura. Friggere la cipolla e poi aggiungerla nel recipiente di cottura insieme al vino, al brodo, a 2 rametti di estragone e ai condimenti. Chiudere con il coperchio e cuocere sull’impostazione alta (High) per circa 3 ore, oppure per circa 6 ore sull’impostazione bassa (Low). A cottura ultimata, togliere dalla pentola i pezzi di pollo e tenerli al caldo. Miscelare fecola e acqua per fare una pastella uniforme e versarla nella pentola a cottura lenta insieme alla panna, mescolando bene. Rimettere i pezzi di pollo nel recipiente di cottura, chiudere con il coperchio e proseguire la cottura fino a quando la miscela si addensa. Al termine, tritare fine il restante estragone e versarlo nella pentola. Servire immediatamente.
