ALLOW THE UNIT TO PREHEAT FOR 30 MINUTES.
After a p eriod of 30 mi nutes —
TURN THE SELECTION KNOB TO THE OFF POSITION.
6. Open the oven door. USING HAND PROTECTION, rota te th e St eam G enera tor Drain Cap until
water begins to flow from the four holes in the cap. In approximately 20 to 60 seconds, a sufficient
quantity of water will have drained from the steam generator so that the drain cap can be completely
removed. Let the water continue to drain until the flow completely subsides.
7. Loosen the thumb screw(s) and swing Fan Guard Cover Plate toward the back of the oven. Using the
hand-held hose, direct a stream of water directly into the Steam Generator Drain and Steam Exit Port
several times. Close the swing-out Cover Plate . Lock the cover into place and tighten thumb
screw (s). Clos e the ove n doo r.
TURN THE SELECTION KNOB TO THE STEAM POSITION.
A new supply of fresh water will begin to flush the steam generator.
ALLOW THE WATER TO RUN FOR 2 MINUTES OF OPERATION IN THE STEAM MODE,
to continue to flush out all remaining solution.
TURN THE SELECTION KNOB TO THE OFF POSITION.
8. Open oven door. USING HAND PROTECTION, replace the Steam Generator Drain Cap by
turning it clockwise until there is a slight resistance. Close oven door.
TURN THE SELECTION KNOB TO THE STEAM POSITION.
The unit will start to fill.
ALLOW UNIT TO RUN FOR 20 MINUTES IN THE STEAM MODE.
TURN THE SELECTION KNOB TO THE OFF POSITION.
9. Open the oven door. USING HAND PROTECTION, rota te th e St eam G enera tor Drain Cap until
water begins to flow from the four holes in the cap. In approximately 20 to 60 seconds, a sufficient
quantity of water will have drained from the steam generator so that the drain cap can be completely
removed. Let the water continue to drain until the flow completely subsides. Replace the Steam
Generator Drain Cap by turning it clockwise until there is a slight resistance.
At the end of the production day, leave the door slightly ajar.
THE UNIT IS NOW READY TO BE USED.
