set by th e op erato r.
CONVE CTION
Conve ction hea t to cook with out steam at a tem perat ure
betwe en 8 6°F a nd 4 82°F (30°C and 250° C) t o be set by
the operator.
LOW STEAM
Low tempe ratur e ste aming wit hin a n op erato r set tem perat ure
range of 98°F to 2 10°F (30° C and 98° C).
CLEAN ING FUNCT ION
An au tomati c clea ning c ycle to hea t the oven to th e corr ect
temperature, followed by a manual application of Combitherm
Oven Cleane r and a 10 minute stea m clea ning c ycle.
An automatic boiler flush is initiated on boiler equipped models
and a vineg ar de calcifi cation can also b e con ducted .
